Summer is officially here! Time to break out your shorts, your shades, and grab a nice cool and refreshing drink. After a winter spent dreaming of sunshine and blue skies, I have never been more ready to soak up some Vitamin D. Summer days also have me fantasizing about a nice, cool, refreshing mojito. Slightly sweet, super refreshing, you will be feeling fine and fancy free. It is super light, so it is great for those hot and sticky summer days. So drink up, but don’t forget the sunscreen!
Fresh Blueberry Mint Mojito
Total time: 5 minutes
- 6 mint leaves
- Small handful of fresh blueberries (defrosted frozen berries work too)
- 1.5 oz light rum
- 1 oz fresh lime juice
- 1 oz simple syrup
- Top with sparkling water
Muddle mint leaves and blueberries together in a cocktail shaker. Add lime juice, rum, and simple syrup. Fill the shaker a little over half way with ice and shake vigorously for about 15-20 seconds.
Pour into a tall glass and top with sparkling water. Garnish with a lemon, extra blueberries, or a mint leaf, and enjoy!
