My most vivid memories of beets come from when I was a kid and there would be a pickled beet on my plate. It’s fuchsia juices would be running at an alarming rate toward other pieces of food on my plate (I can’t stand for my food to touch) and I would have to scoop it up and eat it before it disturbed the rest of my meal. As an adult, I’ve steered away from the vegetable just upon principle.
Now, it’s trendy to add this traitorous vegetable to smoothies. I get it that beets have lots of health benefits like promoting healthy nerve and muscle function with the hefty doses of Vitamin C and Manganese for bone health; but, they taste like dirt.
After doing some research about how to eat beets, it turns out that you can actually make beets enjoyable. All you have to do is make sure that they are peeled completely and then roast them in a dollop of coconut oil. As we all know, coconut oil fixes everything. But seriously, a good roast of a bitter vegetable will bring out its sweetness making it much more pleasant in a smoothie.
This smoothie is filling enough to be a meal replacement and you could even add some chia seeds to make it even more so. I promise you can’t even taste the beets!
